Pennsylvania Wedge Salad Bites with Lebanon Bologna

Ingredients:
For blue cheese dressing:
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled Pennsylvania blue cheese
- 2 teaspoons lemon juice
- 1/2 teaspoon Worcestershire sauce
- Salt and pepper, to taste
For salad bites:
- 1 pound large Pennsylvania Brussels sprouts, quartered
- 2 tablespoons olive oil
- 1/2 cup small cubed Lebanon bologna
- 1/2 cup chopped tomatoes
- 2 tablespoons crumbled Pennsylvania blue cheese
- 2 tablespoons chopped scallions
- Salt and pepper, to taste
Method
- To a lined baking sheet, add Brussels sprouts, olive oil, salt and pepper. Stir to coat and
- bake at 425 °F for 12 minutes. Remove from oven and let cool.
- In a mixing bowl, add blue cheese dressing ingredients, mix to combine and set aside.
- In a cast-iron skillet, lightly crisp Lebanon bologna cubes.
- To assemble bites, top each Brussels sprout quarter with a drizzle of blue cheese
- dressing, tomatoes, scallions and blue cheese crumbles. Add cubes of bologna to
- toothpicks, piercing each sprout with a pick. Serve and enjoy!
