Pennsylvania Bacon Jam

Serves: 6

Ingredients:
  • 2 pounds Pennsylvania Bacon, cut in 1”-pieces
  • 2 Pennsylvania onions, diced
  • 1/2 cup apple cider vinegar
  • 3 garlic cloves, chopped
  • 1/2 cup brown sugar
  • 1/2 cup Pennsylvania maple syrup
  • 3/4 cup Pennsylvania coffee
  • 1 teaspoon red pepper flakes or more, to taste
Method
  1. In a cast-iron skillet, cook bacon until browned, remove and set aside. To the same skillet,
  2. add onions and garlic, cooking until soft and fragrant. Add vinegar, syrup, brown sugar,
  3. coffee and bring to a boil. Add cooked bacon and red pepper flakes; stir to combine.
  4. Transfer jam mixture to a crockpot and cook on high, uncovered, for 4 hours.
  5. Transfer into a food processor and process until coarsely chopped. Serve with crackers
