Pennsylvania Bacon Jam

Serves: 6
Ingredients:
- 2 pounds Pennsylvania Bacon, cut in 1”-pieces
- 2 Pennsylvania onions, diced
- 1/2 cup apple cider vinegar
- 3 garlic cloves, chopped
- 1/2 cup brown sugar
- 1/2 cup Pennsylvania maple syrup
- 3/4 cup Pennsylvania coffee
- 1 teaspoon red pepper flakes or more, to taste
Method
- In a cast-iron skillet, cook bacon until browned, remove and set aside. To the same skillet,
- add onions and garlic, cooking until soft and fragrant. Add vinegar, syrup, brown sugar,
- coffee and bring to a boil. Add cooked bacon and red pepper flakes; stir to combine.
- Transfer jam mixture to a crockpot and cook on high, uncovered, for 4 hours.
- Transfer into a food processor and process until coarsely chopped. Serve with crackers
