Lamb Sliders with Red Cabbage Slaw

Ingredients:
For sliders:
- 1 pound ground Pennsylvania lamb
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chopped fresh flat leaf parsley
- 1 cup chopped fresh mint
- 1/2 cup chopped fresh basil
- 1 red jalapeño, seeds removed and minced
- 4 garlic cloves, minced
- 1 teaspoon lemon zest
- 1 cup Pennsylvania feta cheese
- Tzatziki, to taste
For slaw:
- 1 small head of Pennsylvania red cabbage, shaved
- 2 garlic cloves, minced
- 1/2 cup chopped flat leaf parsley
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup olive oil
Method
- In a mixing bowl, combine slaw ingredients, toss to combine and set a slide.
- In a second mixing bowl, combine lamb slider ingredients, except for the tzatziki, and mix
- well. Form into 2”-patties and cook on medium-high in a cast-iron grill pan for 4 minutes
- on each side, or until desired doneness.
- To a brioche slider bun, add lamb slider, tzatziki and red cabbage slaw. Enjoy!
