Lamb Sliders with Red Cabbage Slaw

Serves: 4

Ingredients:
For sliders:
  • 1 pound ground Pennsylvania lamb
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped fresh flat leaf parsley
  • 1 cup chopped fresh mint
  • 1/2 cup chopped fresh basil
  • 1 red jalapeño, seeds removed and minced
  • 4 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 cup Pennsylvania feta cheese
  • Tzatziki, to taste

For slaw:
  • 1 small head of Pennsylvania red cabbage, shaved
  • 2 garlic cloves, minced
  • 1/2 cup chopped flat leaf parsley
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil

Method
  1. In a mixing bowl, combine slaw ingredients, toss to combine and set a slide.
  2. In a second mixing bowl, combine lamb slider ingredients, except for the tzatziki, and mix
  3. well. Form into 2”-patties and cook on medium-high in a cast-iron grill pan for 4 minutes
  4. on each side, or until desired doneness.
  5. To a brioche slider bun, add lamb slider, tzatziki and red cabbage slaw. Enjoy!
