Chicken Meatballs with Apple Butter Dipping Sauce

Ingredients:
For meatballs:
- 1 pound ground Pennsylvania chicken
- 1 Pennsylvania farm fresh egg
- 1/4 cup grated Pennsylvania apple
- 1/4 cup grated Pennsylvania onion
- 1/4 cup grated Parmesan cheese
- 2 teaspoons finely chopped fresh sage
- 1/2 cup bread crumbs
For apple butter dipping sauce:
- 5 Pennsylvania apples, peeled, cored and cut
- 1 tablespoon ground cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon cloves
- 1/2 cup apple juice
- 1 tablespoon lemon juice
- 3 tablespoons Dijon mustard
Method
- In a stock pot, combine apple butter ingredients except Dijon mustard. Stir, cover and
- cook for 30 minutes. Mash softened apples and continue to cook for 1 hour, stirring
- occasionally.
- In a mixing bowl, combine meatball ingredients and mix well. Form into 1”-balls, add to a
- cast-iron skillet and bake at 400 °F for 20 minutes, flipping halfway through.
- In a small bowl, add 1/2 cup of prepared apple butter and Dijon mustard, stir to combine.
- Serve as dipping sauce with chicken meatballs.
