Chicken Meatballs with Apple Butter Dipping Sauce

Serves: 8

Ingredients:
For meatballs:
  • 1 pound ground Pennsylvania chicken
  • 1 Pennsylvania farm fresh egg
  • 1/4 cup grated Pennsylvania apple
  • 1/4 cup grated Pennsylvania onion
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons finely chopped fresh sage
  • 1/2 cup bread crumbs

For apple butter dipping sauce:
  • 5 Pennsylvania apples, peeled, cored and cut
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1/2 cup apple juice
  • 1 tablespoon lemon juice
  • 3 tablespoons Dijon mustard

Method
  1. In a stock pot, combine apple butter ingredients except Dijon mustard. Stir, cover and
  2. cook for 30 minutes. Mash softened apples and continue to cook for 1 hour, stirring
  3. occasionally.
  4. In a mixing bowl, combine meatball ingredients and mix well. Form into 1”-balls, add to a
  5. cast-iron skillet and bake at 400 °F for 20 minutes, flipping halfway through.
  6. In a small bowl, add 1/2 cup of prepared apple butter and Dijon mustard, stir to combine.
  7. Serve as dipping sauce with chicken meatballs.
